Quality and Storage Stability of Precooked Pork Head Bone Broth

In order to clarify the optimal storage temperature and storage period of prepared pork head bone broth, which was made using an autoclave, changes in color, pH, total bacterial count, thiobarbituric acid reactive substances (TBARS) value, total volatile basic nitrogen (TVB-N) content, droplet size, ζ-potential, and microstructure were examined during storage at -3, 4, or 10 ℃. The results showed that during the whole storage period irrespective of storage temperature, the color gradually deepened, the pH was significantly reduced, the total bacterial count, TBARS value, TVB-N content and droplet size were significantly increased, the absolute value of the ζ-potential was significantly reduced (P < 0.05), and microstructural aggregation occurred. All quality indexes changed significantly faster at 10 ℃ than at -3 and 4 ℃. On the 25th day at 10 ℃, the total bacterial count reached 6.76 (lg (CFU/g)) , and the TVB-N content was increased significantly up to 20 mg/100 g; while the total bacterial count remained at a lower level for up to 60 days at -3 ℃ and for up to 35 days at 4 ℃, and the broth maintained better quality characteristics. In conclusion, the bone broth can be stored at 10 ℃ for only 25 days, but as long as 60 and 35 days at -3 and 4 ℃, respectively.

Effect of Glycerol Combined with Preservatives on the Quality of Semi-dried Blunt Snout Bream during Storage

In order to solve the problems with semi-dried blunt snout bream such as short shelf life and difficulty of circulation, the effect of glycerol combined with preservatives on the quality of semi-dried blunt snout bream during storage was investigated by determining total viable counts (TVC), total yeast and mold counts, microbial composition, total volatile basic nitrogen (TVB-N) content, thiobarbituric acid reactive substances (TBARS) value, pH and sensory evaluation scores. The results showed that with increasing storage time, the sensory scores of both the glycerol combined with compound preservative (0.075% potassium sorbate + 0.025% sodium dehydroacetate) treatment and control groups decreased continuously, and TVC, total yeast counts, the relative abundance of Lactobacillus, TVB-N content, TBARS value and pH increased continuously. Compared with the control group, the combined treatment slowed down the decline of sensory scores, inhibited the growth of bacteria and yeasts, reduced bacterial diversity, lowered the relative abundance of Lactobacillus, reduced the accumulation of TVB-N, slowed down the rate of fat oxidation, and prolonged the shelf life of semi-dried blunt snout bream by 2, 4 and 7 d at 25, 15 and 4 ℃, respectively. This study provides a reference for the quality control and shelf-life extension of semi-dried blunt snout bream.

Effect of Water Activity-Lowering Agents on the Quality of Semi-Dried Blunt Snout Bream

The effect of different water activity (aw)-lowering agents on the water state and quality of semi-dried blunt snout bream was studied by measuring its aw, water state, total viable counts (TVC), yeast count, total volatile basic nitrogen (TVB-N) content, thiobarbituric acid reactive substances (TBARS) value, and sensory scores. The results showed that the type and amount of aw-lowering agents had a significant impact on the aw, water state and physicochemical indicators of semi-dried blunt snout bream, the latter effect being more pronounced than the former one. Trehalose, sorbitol and glycerol reduced the aw, glycerol being the most effective among the aw-lowering agents. When 6% glycerol was added, the aw was reduced from 0.917 to 0.873. With increasing amounts of added trehalose, sorbitol and glycerol, the T22 significantly decreased (P < 0.05), but the T23 did not significantly change. The proportion of immobilized water increased significantly (P < 0.05), whereas the proportion of free water decreased significantly (P < 0.05). Relative to the control group, the TVC, yeast count, TVB-N content, and TBARS value were significantly reduced (P < 0.05) with increasing addition of aw-lowering agents, and the optimal values of these parameters were obtained with the addition of 6% glycerol. To sum up, the addition of aw-lowering agents could effectively reduce water freedom and fluidity and slowed down the quality deterioration of semidried blunt snout bream.

Effect of Different Additives on the Quality and Uric Acid-Lowering Potential of Surimi Gels

To develop high-quality functional surimi products, the effects of exogenous additives (lotus leaf powder, lotus leaf aqueous extract, corn silk powder, corn silk aqueous extract, lily powder, and lily aqueous extract) on the quality and uric acid-lowering potential of silver carp surimi gels were investigated. The results showed that adding different exogenous substances affected the quality of surimi gels to various degrees, and the water-holding capacity of surimi gels increased significantly after adding lotus leaf powder or corn silk powder (P < 0.05), and the gel strength increased significantly after adding lotus leaf powder, lily aqueous extract or lotus leaf aqueous extract (P < 0.05). The addition of exogenous additives significantly changed the flavor and taste characteristics of surimi gels, intensifying the flavor. Meanwhile, compared with the control group, the addition of exogenous substances significantly increased the xanthine oxidase inhibitory activity of surimi gels in vitro (P < 0.05), indicating enhanced uric acid-lowering potential.
