Description
With the continuous improvement of people's living standards, there is an increasing demand for food safety, and there is an urgent need for risk assessment and toxicological mechanism research on components that endanger food safety. Various substances, such as biotoxins produced during the growth, processing, storage, and transportation of agricultural products, chemical hazards produced during food processing, chemical hazards migrating from food packaging, and emerging environmental pollutants contaminating food, all pose threats to food safety. The risks and toxicological mechanisms of these hazards require systematic and in-depth research, and dietary mitigation strategies and mechanisms for the toxicity of hazards also need further study.
Based on this, the journal Food Science and Human Wellness plans to launch a special column themed "Food Toxicology and Risk Assessment." The core objective of this column is to establish a communication platform focused on food toxicology and risk assessment, concentrating on risk assessment and toxicological mechanisms of food components and food contaminants, as well as research on dietary mitigation mechanisms for the toxicity of hazards, so as to ensure food safety and promote public health.
The scope of this special column includes, but is not limited to:
Keywords
biotoxins; chemical hazards; bio-synthesized foods; toxicology; risk assessment; toxicity mitigation
