Description
Edible insects possess characteristics such as high protein content, low fiber content, easily absorbable nutritional components by the human body, short breeding generations, high breeding index, suitability for factory production, and abundant resources. They thus constitute an ideal food resource awaiting further exploitation. Their related products, including royal jelly, honey, bee pollen, and propolis, are also comprehensive nutritional dietary supplements and medical health products, with functions like regulating human physiological functions, alleviating fatigue, and enhancing immunity. The special issue focuses on fundamental research, nutrition and health aspects, novel processing technologies, as well as quality safety and detection of edible insects and their related products. The aim is to achieve a more profound understanding of the field of edible insects, better implement the concept of a large food perspective, and construct a diversified food supply system.
