• The formation of four hazards in fried potatoes, tofu, and chicken wings is studied.
• AA, 5-HMF, HCAs, and PAHs accumulate in food with increased heating time.
• AA, HCAs, and PAHs in chicken wings increase as the increase in frying temperature.
• Significant correlations are found between the concentrations of four hazards.
• A network relationship of four hazards formation mechanisms is established.
