Highlight
• Eighteen coagulase-negative staphylococci (CNS) strain with high protease activity was isolated from Chinese Dong fermented pork (Nanx Wudl)
• All strains exhibited superoxide dismutase (SOD) and catalase activities, growth tolerance at pH 5.0, 15 ℃, 10% NaCl and 150 mg/kg of nitrite
• Significant differences (P < 0.05) in ketone and acid production were observed among the strains inoculated onto the fermented sausage model medium.
• The transcriptomic analysis of S. xylosus strains Sx3 and Sx6, revealed the significant impact of genes related to pyruvate catabolism on aroma generation.
