Highlights
• High-throughput sequencing and UPLC-MS/MS were performed to comprehensively quantify the biomolecular composition of backfat in both Bamei and large white pigs.
• Bamei pig backfat exhibited a higher concentration of nutrients, including increased unsaturated triglycerides, free fatty acids, shorter chain-length triglycerides, essential amino acids, vitamins, and antioxidants, along with reduced cholesterol levels.
• The molecular mechanisms underlying these nutritional differences were explored by analyzing significantly different mRNAs and proteins, and integrating the protein-metabolite-lipid pathway regulatory network.
• In the pyruvate metabolic pathway of Bamei pigs, the bioprocess of lactate production was inhibited but the acetyl-CoA production was activated.
