Abstract

Pit mud played an important role in the production of strong-flavor (Nongxiangxing) Baijiu. The quality of pit mud directly determines the quality of the Baijiu, and the cultivation technology of artificial old pit mud can improve the Baijiu quality rapidly. In the paper, the research progress of artificial pit mud culture technology in recent years was summarized, including the process flow, functions and effects of raw materials and nutrient salt, strains sources and application methods, etc. The cultivation methods of artificial old pit mud were emphasized, including the types of pit mud materials in different regions, the amount of bacteria and related components, culture time and application, and the key culture points of pit mud were analyzed, providing technical references for the scientific cultivation methods, quality control and improvement of pit mud in Baijiu enterprises.
