abstract = {The prominent role of taurine in human health has garnered extensive attention recently. This undoubtedly elevates the application of taurine in functional foods and food engineering. This review, in conjunction with recent research advancements, conducts a detailed examination of the processes of taurine absorption, transportation, synthesis, and excretion, and discusses the influencing factors in each process. It also collates and analyzes the application limits of taurine in various food categories and related safety research reports in seven countries, namely the European Union, the United States, Canada, Australia, New Zealand, China, and Japan. Furthermore, it provides an overview of the use of taurine as a stabilizer, preservative, and in other aspects in food engineering. Finally, it is discussed that artificial intelligence and machine learning have considerable application value in the intelligent monitoring of the taurine processing process.}
