abstract = {The craftsmanship of West Lake Longjing Green Tea, as intangible cultural heritage, has both special technical values and cultural values. The popularization of mechanized processing poses great challenges for handmade West Lake Green Tea. The technology evolution of tea production has been reviewed in this study. Meanwhile, the four technological procedures in the process of manual frying of West Lake Longjing Green Tea were summarized. The aim of this study is to inherit and protect the processing technology of West Lake Longjing Green Tea against the background of digitalization transformation in the tea industry.}
